Delicious Homemade Vegetable Soup

I’m not much of a fan of vegetable soup. This is the first veggie soup that I actually tried and loved. So very healthy too. Although somewhat more time consuming than store bought soup, you just can’t beat the freshness and flavour of this. Meat such as chicken and pasta may also be if you wish.
1 T Olive Oil
1 medium onion, thinly sliced
1 T minced garlic
2 T fresh parsley or ¾ T dried
1 T thyme dried
5-6 large tomatoes chopped
1 medium potato diced
¾ cup frozen corn
1 small zucchini diced
Handful of green beans cut into 2cm pieces
5 C Roast Vegetable Stock
Salt and pepper
In a large pot, sautéed onions, garlic and herbs in olive oil. Add the rest of the vegetables along with the stock. Bring to the boil. Reduce heat and simmer for 1 hour. Add salt and pepper to your liking towards the end of cooking time. Once heat has been turned off, add extra chopped fresh parsley.
