Crock Pot Chicken Stock

This is another easy recipe that takes no time to prepare and I end up with a delicious healthy clear stock to use in recipes. After seeing the price of real natural stock in the supermarkets ($7.30 for 500 mls - geez) in the freezer section, this costs a fraction of the price and the main ingredient, well its the stuff you would end up throwing in the bin anyway.

2 chicken carcasses
3 small to medium onions cut into chunks, some yellow skin can remain
3 medium carrots sliced
4 or 5 sticks of celery sliced
4 bay leaves
Thyme
Salt and pepper

Throw all ingredients into slow cooker, fill up with water to just cover everything. Set your slow cooker to low and leave to cook overnight, about 8 hours. Simple.


I buy the roasted chicken from the deli section of the supermarket. I usually shred all the meat off immediately and use the meat for sandwiches and recipes calling for chicken. The chicken carcass I save in the freezer until I have 2 of them and then make this stock. I prepared this last lot in the evening and woke up to a wonderful homemade stock bubbling away in the slow cooker. Once left to cool slightly, I drain it in a colander and squeeze the excess stock out with a potato masher. I end up with about two litres of pure, natural, clear chicken stock full of goodness. Yum!

Poached Salmon Burger

This is a very quick and easy way to prepare a fresh piece of salmon and turn it into a scrumptious burger. Very healthy, very quick and a great anti inflammatory meal when you just don't have the time.

1 fillet of fresh salmon
1 cup of white wine
Fresh or dried thyme
2 bay leaves
Cracked dried pepper

Throw the salmon into a small pot, add the wine, thyme, bay leaves and pepper and add enough water to just cover the salmon. Bring to a gentle boil, then gently simmer until salmon is cooked. Once cooked, drain in a colander and put in a fresh wholemeal bun, with a sprinkling of lemon juice and add lettuce and any other salad ingredients you want to add.


A great alternative to a classic mince burger. I like to make these while the rest of the family opt for beef. It really takes no time to prepare so I don't feel like I have to make two different meals on our "burger nights"

Potato and Leek Soup

Leeks and potatoes are alkaline vegetables and therefore is a great way for those trying an alkaline based diet to help improve their symptoms. This is one of the popular soups that I made in a cafe I was once involved with. It is delicious and just what you need on a cold winters day plus its packed with vitamins. As leeks belong to the same family as onions and garlic, the health benefits of this soup is ideal to help the strengthen the immune system and ward off those nasty bugs and germs. Quick and easy to make.


2 medium leeks
2 medium potatoes
4 cups of homemade chicken and vegetable stock
2 teaspoons of garlic
2 tablespoons of olive oil
1/2 teaspoons of salt
Pepper to taste

Wash and chop up leeks into small pieces. Fry with olive oil on low to
medium heat until leeks are nice and soft.

While leeks are slowly cooking, peel and chop the potatoes into small cubes.
Once leeks are nice and soft, add the potatoes, chicken stock and salt and bring
to the boil. Once boiled bring heat down to a lower temperature, cover and
simmer for about 30 minutes until potatoes are soft. Take off the heat and let cool slightly, blend together with hand blender until smooth. Add pepper to taste. The key ingredient to this soup is the pepper so don't be scared to add lots of pepper.

Tofu Fried Rice

This is a recipe I found and made from Dr Weils website. I have never been successful at making fried rice, I’ve always found my rice was either quite flavourless or too salty (too much soy sauce to combat the lack of flavour - hmm). Anyway, I found this was the perfect combination of ingredients to make a tasty, delicious dish and suitable for vegetarians too. The ginger and the sesame oil really add to the flavour. I did add some chopped carrot and celery and replaced the peas with green beans.

This fried rice is great for those with inflammation conditions such as rosacea as it calls for a tablespoon of grated ginger, an active anti-inflammatory food. It has also been known to help relieve osteoarthritis pain and swelling. When I’m in an extra healthy mood, I make this with brown rice, yum

Easy Salmon and Vegetable Bake

Salmon is one of nature’s super foods. Its anti inflammatory has anti allergic properties and is rich in healthy omega 3 EFAs. Seeing as rosacea is an inflammation of the skin condition, incorporating more cold water fish into your diet such as halibut, mackerel, sardines, herrings and salmon into your diet, you should hopefully see some improvement in the condition of your skin. Please keep in mind though eating more of these types of fish is only a small part in managing rosacea. As I’ve said before many, many factors can contribute to red faces and flushing and all people react differently. We all should be aiming to eat at least 2 serves these types of fish per week anyhow, rosacea or no rosacea as part of a healthy balance diet.

Hearty Roast Pumpkin Soup

This is the best pumpkin soup I have ever made. All natural ingredients, it is a winner with everybody in my family. The recipe was from a lovely elderly neighbor of mine who really knew how to make good old fashioned pumpkin soup. The added carrots gives the soup a nice richer colour. Not only is pumpkin low in calories, it is also a good source of vitamin A, C, K and E. Pumpkin is one of those vegetables I love to eat, but I always end up with surplus in my fridge and more times than not I have to throw it out. This is a great solution for me to cook up all the pumpkin at once, enjoy the taste over a couple of days and know that I am eating a healthy meal filled with vitamins and goodness at the same time. A favourite simple dish my kids enjoy is a bowl of pasta topped with pumpkin soup with some grated cheese sprinkled on top! Delicious and healthy!

Hearty Pumpkin Soup

Delicious Homemade Vegetable Soup

I’m not much of a fan of vegetable soup. This is the first veggie soup that I actually tried and loved. So very healthy too. Although somewhat more time consuming than store bought soup, you just can’t beat the freshness and flavour of this. Meat such as chicken and pasta may also be if you wish.

Roast Vegetable Stock

This is a great recipe for homemade vegetable stock. Because the vegetables are roasted, the stock has a richer, and more flavourful taste, far better and much healthier than the store bought stocks. I used to be lazy in the stock department always preferring to buy from the supermarket. I have made this numerous times now and although it takes just that little bit longer than throwing the veggies in the pot, I think it’s very much worth it.
