Poached Salmon Burger

This is a very quick and easy way to prepare a fresh piece of salmon and turn it into a scrumptious burger. Very healthy, very quick and a great anti inflammatory meal when you just don't have the time.
1 fillet of fresh salmon
1 cup of white wine
Fresh or dried thyme
2 bay leaves
Cracked dried pepper
Throw the salmon into a small pot, add the wine, thyme, bay leaves and pepper and add enough water to just cover the salmon. Bring to a gentle boil, then gently simmer until salmon is cooked. Once cooked, drain in a colander and put in a fresh wholemeal bun, with a sprinkling of lemon juice and add lettuce and any other salad ingredients you want to add.
A great alternative to a classic mince burger. I like to make these while the rest of the family opt for beef. It really takes no time to prepare so I don't feel like I have to make two different meals on our "burger nights"
